So, finally I have a lamb/mutton recipe out on the website! Many people, have this confusion over the difference between lamb and mutton. Well, both are basically the same animal i.e sheep but in different stages of life. A sheep older than one year is generally called mutton and the sheep less than a year old is called lamb. Pretty simple eh? Growing up, mutton used to be made occasionally, either in a curry or a biriyani. This is a great, rich curry to serve to your loved ones. I have used Indian spices and flavors with this recipe. Fresh lamb/mutton should be used as it helps in the overall taste of the curry. I have baked the lamb pieces before simmering it in the curry. Time For Fall Flavors

I forgot that tonight begins Rosh Hashanah, followed by a second day on the 1st, the Feast of St. Francis on the 4th, Yom Kippur next week and Sukkot the week after.
I’m not formally Jewish, but I follow out the Jewish holidays (beside the Catholic ones) all year all of my life. For that matter, I am avoiding my rage and anger on the meatless burger at fast foods locations almost everywhere for the month of October, but I will return to it from time to time.

Let the Happy Holidays begin everyone. If spring time sees me returned finally without more mention of it and I doubt it — I will surely begin my lament of anguish on it again. (Thanks.)

HOMEMADE CINNAMON BREAD

Leftover slices of bread make delicious French toast.

Ingredients

For the dough:
6 cups bread flour, divided
2 packages (4½ tsp, ½oz, 14g) Instant Baking Yeast
½ cup of sugar
1 teaspoon salt
3/4 cup whole milk
1/2 cup of water
1/2 cup unsalted butter
2 large eggs

For the filling:
1/2 cup packed brown sugar
1 tablespoon cinnamon
2 tablespoons butter, melted

Directions

Add 3 cups flour, the yeast, sugar, and salt to the bowl of a stand mixer fitted with a paddle attachment; mix on low for 30 seconds to combine ingredients.

In a saucepan or microwave-safe dish, heat milk, water, and butter until warm (120°-130°F; butter does not need to melt).

Add milk mixture to the flour mixture. Mix on low until just combined. Add eggs. Blend at low speed until moistened; mix 3 minutes at medium speed.

Poached egg with girolles, Västerbotten cheese and toasted hazelnuts

Girolles are the same as chanterelle mushrooms (looked this all up) and Vasterbotten cheese is made from that region in Sweden, but has equivalency with cheddar. (I’m wondering if it has to be hard cheese, because otherwise, I would also like to suggest the harder variety of soft, yellow scamorza (Italian soft cheese that comes white or light yellow).

My first attempt at cooking a 63C egg didn’t work too well, as I tried to multitask and wasn’t paying attention the whole time. Big mistake. Huge. So instead I poached eggs. And served it with butter-fried girolles, Västerbotten cheese and toasted hazelnuts. It was delicious but I still dream of perfecting that 63C egg and serve it with girolles. I mean, is there anything better than a runny egg yolk with garlicky mushrooms?! I don’t think so.

Listening to my favourite food podcast (in Swedish) I learnt a new way to toast nuts, in the oven. So much better than in a dry frying pan. It will change your life. I promise. All you need to remember is 150C for 15 minutes.

Fried Egg Sandwich

IMG_20190908_134440 Spread with mayonnaise or 100 Island dressing, or ranch or butter and/or the condiment of your choice. Mustard is a traditional choice, but catsup, salsa, piccalilli, chutney, sweet and sour sauce or even BBQ sauce can make this an adventure.

Corsican Spice Bread with Candied Citrus

The more difficult articles to find like chestnut honey and chestnut powder may be found at Supermarket Italy (link on sidebar) or also Yummy Bazaar (link on sidebar). There are probably other places to find those products like Amazon.com and I would bet Walmart also has those items (because Walmart has everything and that is an excellent thing of course), but not being sure, I thought I would mention two places of surety to have.

This recipe brings some of the best ingredients of Corsica together: Wonderfully nutty chestnut flour, fragrant citrus and the island’s dense, dark-golden honey. Making this cake takes my imagination back on a hike through the island’s lush green forests, and I can almost smell the damp forest floor after a violent summer rain. –

Even if your imagination is not quite as (over-)active, or you simply have not yet travelled to Corsica, this not too sweet spice cake may be a wonderful choice for your tea break. And if you like it a bit sweeter, you may choose to drizzle a bit of that honey on top…
